I admit it…I’m simply over the moon! I’m so honored to be featured on the In the Kitchen With series on Design*Sponge. When Grace and Kristina asked me to share a recipe, I knew I wanted it be simple, versatile and close to home. Something fun, healthy, and super flavorful that anyone could make and enjoy, any time of the year.
I grew up with these Vietnamese Spring Rolls. I remember sitting around a big table, or sometimes on a big blanket spread out on the floor, surrounded by my aunties, uncles, and cousins for hours rolling and munching down on these babies. I can still hear sounds of hearty laughter, constant chatter and joy. So much joy. When I think of these spring rolls, I feel nothing but love for family and the tastes and nostalgia of the Vietnam we left behind. Plus, they’re so dang tast-eeeee! I promise, you’ll never eat just one. You can substitute the shrimp for your protein of choice (anything thinly sliced and grilled) and the veggies for whichever ones you love most. Please don’t forget the Hoisin Peanut Dipping Sauce. For me, it’s the mother of all sauces.

These look delicious, such a simple meal as well but packed full of flavour. We still sit around on the floor eating these ‘wraps’, often with a big plate of bbq roast pork with crackling, yum.

Your memories of spreading on the floor making these remind me very much of my memories of cooking in a family crowd when I was younger! Such lovely times.

Artnek, that pot is actually a mortar and pestle I bought years ago in a small specialty shop in Yountville, CA. However, I’m sure you can easily find a similar one on-line.

Giao – I’ve been making this for years every since you taught me to make these delicious wraps. I now use cashew butter instead. I also found a great organic hoisin sauce that does not have MSG.
They look fabulous and refreshing. They are perfect for a hot summer weather here. The photos are stunning.

G these pictures are absolutely wonderful — they fit the essence of the perfect vietnamese springroll: light, beautiful and DELICIOUS. My mom and I would make these and we would seriously down 4-5 springrolls each — how could one resist?? I rented a room in the home of a beautiful Vietnamese woman when living and working in D.C. shortly after college and she was the most amazing cook…she would sit with her extended family on the floor of her expansive kitchen each night and chop vegetables and shell seafood for a vast array of Vietnamese dishes. Congratulations. These pictures take me back to such fond memories and I hope to try these lovely spring rolls shortly.

We ate roughly a million of these last night. We had had a heavy lunch, and it was easy to convince ourselves that shrimp, herbs, veggies, and spring roll wrappers could not possibly be a ton of food… but then, that sauce… well, as overindulgences go, it was aces and probably healthy for us too. :)
