As we finished up dinner last night, I didn’t know whether to laugh or cry. Laugh as a result of the delicious delirium which ensued after such an epic cant-stop-licking-your-fingers-kind-of-meal, or cry uncontrollably from the fact that it was over. I’ll be honest, one or two welled-up tears may have puddled in my eyes, but at least, I tell myself, I can look forward to next time. Typically, I know a recipe is worthy of dog-eared status, and a next time, when I’m still pining over it the following day.
Tick tock, tick tock, tick tock.
Fast forward to 6:30 a.m. this morning, and as suspected, I opened my eyes and immediately started thinking of last night’s Rosemary Lamb Popsicles. There’s not much more to be said, really. Summer’s around the corner and she is screaming—literally SCREAMING AT THE TOP OF HER LUNGS, for these herb encrusted (by the way, I LOVE using panko breadcrumbs for this crust), minty, garlicky, flavor-wholloping popsicles. You can easily whip these little gems up on any weeknight, or turn it into a showstopper for all those upcoming summer BBQ’s and soirees. Topped with a big helping of mint gremolata and served along side some couscous or a simple green salad, and you’ve got a pretty darn good reason to laugh all summer long.

Hi Kimberly and Jade! Sorry for the confusion! I was inspired by a restaurant in Vancouver (Vij’s…AMAZING Indian food) that referred to their signature rack of lamb dish as “popsicles”. And trust me, you end up eating these babies with your fingers, very much like a popsicle! :)

Hi Sherilyn — agree wholeheartedly with you. We’re not the biggest meat eaters either (mainly veggies and fish in this house), but every once in a while, you get a craving and it has to be met! :)
I don’t eat that much meat but for some reason I get really excited about lamb. I love lamb, full of flavor, tender, adaptable. This is a great recipe that I will tuck away for our next go round of lamb. Thank you!

I am a bit confused by the popsicle name – in Australia we called them lamb cutlets….and yes, they are divine. Your recipe looks incredibly good, I love lamb with rosemary or mint, but I never thought to try them combined – perfection!

Tries these out tonight. My butcher didn’t have rack of lamb so we got lamb cutlets (only realized they were also boneless once I got home) and I think they made a big difference in the end results. The dish felt too dry for me due to the lack of wet ingredients. If I were to try this again I’d render off some of the fat in a pan before putting it in the oven just to add more texture, this is also where getting the right cut would’ve helped. I also would like to add something to counter balance all the acidic flavors in this dish. As a whole this was a great dish with a big hit of flavor, it was just missing a little something to turn it into a “wow” dish. Will definitely have to try making this again, thanks for the recipe!
I made something very similar the other day and my rosemary-garlic-breadcrumb topping (that had become beautiful and and crunchy in the oven) fell off when I wanted to cut the meat in between the bones. Any advice how to cut these the best? I ended up using a pair of poultry scissors and it all was a mess;-) But tasted great! Lovely pics by the way!
